Here's all you need:
- 1 lb bacon {yes, a whole pound!}
- 1 1/4 C semi-sweet chocolate chips
- 1 stick butter {1/2 C}
- 1 C white sugar
- 1/2 C brown sugar plus 1/4 C + 2 Tbsp
- 4 eggs
- 1/4 C cocoa powder
- 1 1/2 C flour
- pinch of salt
- 2/3 C chopped California Walnuts, {if desired}
Here's all you do:
- Preheat oven to 350*
- Saute bacon until almost crispy, remove from pan and and finely chop.
- Drain grease from pan, reserving a 'splash' {I used a couple of teaspoons}
- Return bacon to pan and add 1/4 C + 2 Tbsp brown sugar, heating and stirring until coated. Remove to paper towel
- In saucepan on low heat, melt butter and chocolate until smooth
- Pour into large bowl, scrapping sides
- Beat in remaining sugars and the splash of bacon fat. Beat in eggs until smooth
- Mix in 1/2 C bacon and California Walnuts {if using}, pour into buttered 9 x 13 baking pan. Sprinkle remaining bacon on top
- Bake for 45-60 minutes
- Allow to cool before cutting
Makes 12 large {and very rich} brownies
